I love stuffed bell peppers, but I don't make them very often.  I'll have to give this recipe a try, thanks for sharing.

Pamela,

My wife loves stuffed peppers.  This recipe sounds great.  I will make this one for her.

Hi Erika - When I had 5 children at home and a full-time job outside my home, I used to spend some time on the weekends preparing "freezer meals".  Although I don't think Stuffed Peppers would freeze well (the pepper would probably turn to mush), you could make them ahead and serve them within the next few days.  Anyway, I hope you'll give them a try.

Great, Richard!  Gotta love a man who cooks!  My husband does most of the cooking at our house and he's really good at it.
