Easy Pineapple Pie

I had never made a pineapple pie before but thought it might be kinda interesting to try.Easy Pineapple Pie

  • 8 ounces softened cream cheese
    1 14-ounce can condensed milk
    1/3 cup lemon juice
    1 8-ounce carton whipped topping
    1 15-ounce can crushed pineapple, drained
    1/2 cup chopped pecans
    2 graham cracker pie crusts

Combine the cream cheese, condensed milk, and lemon juice. Beat with a mixer until smooth. Stir in the pineapple and nuts. Fold in the whipped topping. Divide the mixture evenly between the two pie crusts.

Chill in the refrigerator at least four hours before serving.

I like it!  What do you think?  What's the most unusual pie you've ever baked or eaten?

I have had the pleasure of eating my wife's pineapple pies (her mother's recipe) for over 40 years.  I have never met anyone outside of her family who has ever heard of a pineapple pie.  Of course, the crust has to be light and flaky.  I can taste one just thinking about it.

Hi Larry - thanks for the response.  I have a wonderful pie crust recipe I got from Cracker Barrel.  It has the light, flaky texture you're talking about.  I even adjusted it a bit to make it even better.
