Greek Pasta Salad

Get your Greek on with this delicious pasta salad…Two Sisters Talking - Food-Recipes - Greek Pasta Salad

  1. 1 16 oz. box Bow Tie Pasta, cooked al dente
  2. 2 Cucumbers, scored, seeded and sliced
  3. 1 yellow Bell Pepper, julienne
  4. 1 small Red Onion, julienne
  5. 1 10 oz. bag of Baby Spinach
  6. 1 8 oz. Feta Cheese, cubed
  7. 4 oz. Pine Nuts, toasted
  8. 1 16 oz. Greek Vinaigrette
  1. Cook pasta, according to directions. Rinse and set aside.
  2. Toast pine nuts on baking sheet, in 350* oven, for approximately 5-8 minutes. Let cool.
  3. Add cucumber, yellow bell pepper and red onion along with Greek vinaigrette.
  4. Stir until well blended.
  5. Fold in spinach, feta cheese and pine nuts.
  6. Reserve 2 tbl. feta cheese for garnish.
  7. Chill 15 minutes before serving.

You may only need 10-12 oz. of Greek Vinaigrette.  It’s up to you!!

Hi Maggie - As long as you have to buy feta, look for the one with basil and tomato.  Yum!
