Grilled Stuffed Portabella Mushrooms - Cosmic Cooking with Carra

Funny thing happened on my facebook wall today.  I posted a picture of my portabella mushrooms on the grill for a Sunday Bar-B-Que, my friends loved it and wanted to know what was in them.  So here it is.  A fun hamburger or chicken replacement idea.   Grilled Stuffed Portabella Mushrooms.

4 large portabella mushrooms rinsed

1 medium onion chopped finely

1.5 cups sugar plum tomatoes chopped

Mushroom stems chopped

1 teaspoon seasoning such as:  Emeril Original Essence or Italian Seasoning or Mexican seasoning

2 Tbs. olive oil

Mozzarella log

Avocado for garnish

Rinse the potabella mushrooms and remove the stems.  Chop the stems, and onion very fine.  Cut the tomatoes in half and mix all three ingredients with seasoning.  If you like Italian flavoring use that or Emeril's Original Essence.  Brush the bottom of the mushrooms with olive oil.  Place on a wire mesh tray to grill.  Pre-heat the grill to 400 then turn down to medium when ready to grill.  Cook covered for 15 minutes.  Check to see if the mushroom are getting soft and the stuffing is cooking.  Add the cheese when they are about 5 minutes from being finished. After removing from the grill add Avocado garnish for fun and great flavor. 

Think outside of the box with fun ideas to stuff the mushrooms. Try grilling the mushrooms then adding just Mozzarella cheese.  Top with organic marina sauce and enjoy eating light with lot of taste!

I love Portabella Mushrooms. Well to tell you the truth I love all kinds of mushrooms! What a great idea to have the recipe and the pictures too. I will bookmark this and see if my son will put some Portabella Mushrooms on the grill the next time he cooks for us. Thank you so much for the information!

Rick ~  I am so happy you like this.  My daughter has been encouraging me to go organic and portabella mushrooms are one of the natural things she cooks with too.  Happy to hear you might try it!  Come back and tell me when you do cook them!

Melody ~  I think it all takes practice.. I watched my daughter do them a couple times before I jumped in.  I think the key is cooking them long enough so they are soft.  Well that is what I think :) .

This is now on my list to barbecue this week.

I'm going to substitute the seasoning with a little HP Sauce, which I enjoy with mushrooms and tomatoes.

I love portabella mushrooms but it's bad that i'm the only one in my house that likes mushrooms! But I just might try this and have them for lunch/dinner in one day:)

Hi Carra - I love portabellas.  I've even started buying the baby portabellas to use in other recipes.  I'll have to give your recipe a try.  Sounds great for hot weather food.

I made a relish with the onion and stems, which were sautéed and HP Sauce (3 tablespoons) added. The photograph was taken as the Mozzarella was being added (the slices were large so I split them in half). If it wasn’t for the cheese they would be completely vegetarian.
