Grilled Stuffed Portabella Mushrooms - Cosmic Cooking with Carra
Funny thing happened on my facebook wall today. I posted a picture of my portabella mushrooms on the grill for a Sunday Bar-B-Que, my friends loved it and wanted to know what was in them. So here it is. A fun hamburger or chicken replacement idea. Grilled Stuffed Portabella Mushrooms.
4 large portabella mushrooms rinsed
1 medium onion chopped finely
1.5 cups sugar plum tomatoes chopped
Mushroom stems chopped
1 teaspoon seasoning such as: Emeril Original Essence or Italian Seasoning or Mexican seasoning
2 Tbs. olive oil
Avocado for garnish
Rinse the potabella mushrooms and remove the stems. Chop the stems, and onion very fine. Cut the tomatoes in half and mix all three ingredients with seasoning. If you like Italian flavoring use that or Emeril's Original Essence. Brush the bottom of the mushrooms with olive oil. Place on a wire mesh tray to grill. Pre-heat the grill to 400 then turn down to medium when ready to grill. Cook covered for 15 minutes. Check to see if the mushroom are getting soft and the stuffing is cooking. Add the cheese when they are about 5 minutes from being finished. After removing from the grill add Avocado garnish for fun and great flavor.
Think outside of the box with fun ideas to stuff the mushrooms. Try grilling the mushrooms then adding just Mozzarella cheese. Top with organic marina sauce and enjoy eating light with lot of taste!
