Dust off the outdoor grill. It's time to enjoy the beautiful weather and fabulous food!

 

* 2 - (3/4#) pork tenderloin

* 1/2 cup dry sherry or orange juice

* 1/2 cup soy sauce

* 2 tblsp. brown sugar

* 1 tsp. ground ginger

* 2 cloves of garlic, minced

Place tenderloins in a large shallow dish. Combine sherry and remaining 4 ingredients; pour over tenderloins. Cover and marinate in the 'frig for 8 hours, turning occasionally. Preheat the grill. Remove tenderloins from marinade, discarding marinade.

Cook tenderloins, covered with grill lid, over medium -hot coals (350 - 400 degrees) 20 minutes or until a meat thermometer inserted in the thickest part of the tenderloin registers 160 degrees, turning once. Cut tenderloins into slices to serve.

NOTE: Perfect marinade recipe for pork chops and chicken, too!
